
This week's OLS challenge was not as exciting as last week's. For dinner Friday night, we got some Nest Fresh Eggs from the grocery and I made an egg salad. The mayo and spice were not local. I put it on some Udi's wheat and honey bread, which is local to Denver and they sell all their breads in the grocery stores around town. I also had some asparagus from Pope's farms (Wiggins, CO) left over from the farmer's market so I boiled it and then added a wee pinch of salt, pepper, and a dollop of butter. It was a simple, yet tasty little meal.
